When there was no refrigeration, the travelers were missing Yogurt. Most of the meals in India are completed with curds/yogurt.
Strained Yogurt
To carry yogurt, they strained the whey from the yogurt and started taking the strained yogurt. Since this was turning sour overnight, they started adding sugar and nuts.
